What did you do today?

It seems like since Amelia started preschool again, we are always on the run. It's good though, I think I'm better at time management when I've got things pretty scheduled. Here's what we accomplished today.

Up at 6
Shower
Make Breakfast,
Unload the dishwasher
Start a load of laundry,
Get kids up
Make the beds,
Kids dressed, hair brushed, teeth brushed
Put laundry in dryer, start another load,
Pack Amelia's snack
Leave for preschool.
Return home 1.5 hours later
Home for an hour.
Do more laundry,
Pay Bills
Make Costco list
Find pattern for Jeff's Halloween costume (he's going to be Fred Flintstone.)
Pack lunch for Anthony and I.
Head back to preschool
Take the kids to the park to play and eat lunch,(No lunch was actually consumed by aforementioned children.)
Go to the bank, (Big mistake taking my two children inside the bank. Note to self, from now on if it can't happen at the ATM, it ain't happening!)
Drive to Costco
In and out of Costco for under $150 dollars and in less than 2 hours. Amazing. Should have skipped trying to make the kids eat lunch, they liked the Costco samples way better.
Now we're home, the Costco stuff has been put away, dinner is planned for tonight, Ant is napping and Amelia is watching a cartoon. And I'm sitting here eating my lunch. Now I have to go put away all the laundry I've done today, pick up the toys a little, and clean out the cat box. Oh and I have a dentist appointment as soon as Jeff gets home from work. Isn't my life exciting and glamorous? :-D

The (almost) finished kitchen

I love my oven! I had a party here Sunday, and had to make some bread and a cake Saturday night. It was so nice to have the two ovens so I could bake at different temperatures.

Menu Plan Monday: New kitchen edition

I have a working kitchen again! Well it's a mostly working kitchen, the dishwasher isn't hooked up yet, and the back splash still needs grout, but I can bake, and prepare meals, and we can eat in the dining room instead of having picnics on the carpet in the living room. So, I'm finally back to planning real meals. I haven't totally unpacked all of my kitchen stuff yet, but it's getting there.

I had a party here yesterday and I was so excited to be able to bake the bread and cake for the party in my new kitchen. So here's this weeks menu.

Monday: chicken, broccoli, brown rice, salad
Tuesday: Sausage Potato Soup, salad
Wednesday: whole wheat pasta, red sauce, veggies, salad
Thursday: turkey burgers, sweet potato fries, salad
Friday: pork chops, potatoes, veggies, salad
Saturday: home made pizza
Sunday: leftovers- Not sure if we'll even be home at dinner time.

So close...

The kitchen is almost done. My sanity is gone. I am never remodeling again. My whole house is covered in a layer of dust from the tiles being broken (we're redoing most of the floors too). I'm just over it all. Here are a few pics...

Kitchen update 4:

Well we're two weeks into the remodel. I was initially told it would take two weeks total, but I figured that was a bit optimistic. The cabinets are just about finished.

The first three pics are from earlier in the week, the next two are close ups of the crown. It's hard to take pics in there right now because everything is covered in tape and plastic because it's all getting stained today.

After the cabinets are done sometime this weekend, no one is going to be here working again until Wednesday. Hopefully then we'll get the granite templated and put in. Then we'll just need to get the drywall patched and painted and the back splash installed. Lastly will be the floors. Hopefully in another week or two we'll have a kitchen again. :-)

Yummy!

I found this on evanovich.com (a website for an author I like) but things don't stay up on their website for long. Amelia loves peanut butter, so I thought we'd make these once we have a kitchen again. :-) We'll probably cut down the sugar some though, use some whole wheat flour and skip the chocolate because Amelia doesn't really like chocolate. Anyway.

Sinfully Sweet Sixteen Cookies
Peanut Butter Cookies - half dipped in milk chocolate

1 cup granulated sugar
1 cup packed brown sugar
1 cup butter
1 cup peanut butter
2 eggs
2 + 1/2 cups all purpose flour
1 + 1/2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 bag Resse's chips (They are where you find the choc. chips)
1 bag milk chocolate (the kind for making candy)

Mix the first 5 ingredients together in one bowl. In another bowl mix the next 4 ingredients and combine. Then add Resse's chips to the mix.

Shape dough into 3/4 inch balls 2 inches apart on an ungreased cookie sheet and bake at 375 degrees for 7 min. until they just start to turn light brown.

Let cool.

Melt milk chocolate in a double boiler or the microwave.

Dip the cool cookies half way into the melted chocolate and place on wax paper to cool (the chocolate will harden).

Then store in a air tight container.
